    Default Fish cooking question...............


    Sometimes when I roll the fillets in the breading mix, they become kind of sticky, and the breading will not cover the whole filet.......spotty and seems like in clumps. When you fry them, the breading mix will burn before the fillets cook, and they don't taste right. I don't know weather the fillets are too dry, too damp or what when I dip them in the mix. Any help would be appreciated!

    Hmmmmmm, this problem may be too complicated to solve on line. The next time you have a fish fry, let me know and I will give you my professional unbiased opinion after I try a few of them.

    Fillets are to damp, when the meal or watever you use gets to much moisture in it , itwill clump and not stick to the fillet like its spposed to

    i pat dry my fillets with paper towels to get as much moisture off of them as i can. then i give them a light coating of mustard before breading. they come out golden brown.

    Do yall let the filets sit in the meal for say 10 minutes or so? I let mine sit while the grease heats up... but they ain't quite like mama's cookin

    Wrong wrong wrong, these fillets are ruined and need proper disposal, get a cooler and put them all in the cooler and take it to the store in the morning, will come get them and relieve you of these worries. Your welcome!

    We soak em in buttermilk for quite a few hours and run em thru the cornmeal and they always hold a crust. And that's mommas way!!

    We use hot sauce in with the buttermilk too
