    Default Sausage forever


    I shot a big 6 pt this year, he was a cull buck on our hit list to take out of the herd. I had a guest with me so I shared half of the deer meat with him and had my half made into green onion sausage. The neck, front leg and hind quarter left me with about 40 lbs of cleaned deer meat which I brought to the processor. When I went to pick it up yesterday I ended up with 42 two pound vacuum sealed bags. I gave away 11 packs before this picture. Name:  IMG_0518.jpg

    If that's a cull y'all must have some nice bucks tending the herd. The sausage looks good. My daughter and I processed about 70 pounds of deer into sausage and ended up with around 140 pounds of sausage. We made ours into links and also had more that we just ground. Ended up with 192 links in 64 packages. All was vacuum packed and frozen.

    Pawpaw Gene I'll will stick with canning my vegetables and making jelly's. this young man that does the prossesing and sausage making has his recipies down pat. That reminds me I brought my last pt of bread n butter pickles to the Larto get to gether, come on spring.
