To start this off correctly I usually plan to cook something special when it rains sense this crazy flu bug thing. Last week was Mother’s Day and went to Charline’s sons house and he cooked and not to be outdone I made something special for her tonight. It’s supposed to rain Saturday and Sunday so here goes. Eggplant meatballs with Italian sausage meat saucy and homemade garlic bread.
Just some of the ingredients
Eggplant baked for 45 minutes
Mixed up eggplant meatballs
Italian sausage meatsauce
Baked eggplant meatballs baked with a hunk of mozzarella cheese inside
Clarified real butter garlic sauce to spread on the French bread
Oh yea time to eat

You bake the eggplant and scrape out the inside into a wire strainer and squeeze the liquid out. Mix that with some sliced up french bread, eggs, basil, garlic and bread crumbs. Combine and roll into gulf ball size meatballs and stuff a piece of mozzarella cheese inside and bake. I followed cooking with Nonna on utube. Man talk about good, I will make this again.
