4 30 am lite a big fire, sit around and drink coffee and eat a dozen glazed donuts. When you get a big bed of coals add more wood and then hang the pig on a rotisserie hind quarters down for at least 4 hrs or until it stops dripping then flip and continue cooking about another 3 hrs or until the meat starts to leave the ribs and the skin is dark golden brown. Dump him on a table and pull it apart in serving size pieces. In the black pot brown dressing mix ground chicken hearts gizzards and livers. The onions bell peppers go in with fresh ground pork, let that simmer till the pig is almost done then add cooked rice. Bake 4 trays of sweet potatoes invite about 30 people and have a good time. Some other guest brought home made bread green beans pecan pies pumpkin pies and fresh cracklins. This was all done for a good friend who just turned 80.

We did side dishes on wood coals too. Buried a Dutch Oven of beans in ground surrounded by coals.
