    Default Cleaning Out the Freezer


    After digging down deep under the Sac A Lait filets I found what I was looking for. A gal ziplock bag full of Pouldeau gizzards and hearts. You guessed it gizzard gumbo with fresh elk sausage and smoked wild hog sausage. Ca c'est bon Just in time for the Saints Game.Name:  WP_20171202_001 (1).jpg

    I had heard that Cajuns would eat anything. This post now confirms it!! Coot gizzards and hearts. Oh Lord! LOL

    I called them Ivory billed teal when I duck hunted.

    Once way back when I was a kid I killed one of those, when I tried to clean it that's when I found out you need a pair of pliers to pull the feathers out of that bird. We put both in the pot then through the bird away when the pliers got tender.
