You shouldn't have any problems towing your boat. And yes if it gives you a piece of mind a external cooler can be added easily and not break your wallet.
But i wouldn't worry over it for 2500lbs.
I'm looking at two pretty much identical trucks except one has a tow package, hitch receiver and transmission cooler, the other does not. How important is a transmission cooler and can it be installed? Obviously I would install a receiver just wondering about the importance of a transmission cooler. I'd be towing my boat so about 2500 pounds and the vehicle is rated for a towing max of 7200 pounds.

There will be days when the fishing is better than one's most optimistic forecast, others when it is far worse. Either is a gain over just staying home.LSL Angler LIKED above post
What kind of trucks are they? Its likely not just the trans cooler and receiver hitch that are different. Most newer full size trucks with tow packages have a lower final drive gear ratio as well. At 2500 pounds though, you won't notice a difference. The difference starts to show when you get up past about 75% of the gross weight.

I tell you I really like a truck that has a transmission temp gauge rather than an idiot light. It helps to tell exactly how much stress it's under. Sounds like the match your talking about will be okay. I will tell you that two things really work on a transmission....towing uphill...and high outdoor temps. You really want to see what it will do try it on a 100 degree day where there are a lot of LONG inclines. If your ever going to overheat one that's when you'll do it. I read a pretty good article one time in something like Poplar mechanics or something. It was one of the most indepth pieces I had ever read. It said whatever you do if you exceed a maximum temp of something in the 300 degree range(?) to always change the fluid. Don't leave the fluid in a transmission thats been hot..change it.

They are both Chevy silverados and I believe the engine and axle ratio are standard or the same but I'm still doing research on that
I drive a Ram 1500 with tow package, hauled some light rigs never shifts down on normal run. But as I always say , better to have it and not need it // than to need it and not have it.

Like Beagle man said "better to have it and not need it // than to need it and not have it." Being a retired truck driver would never have a pickup without a tow package, the trans. heat gauge would be another plus if I knew I was going out West. To many people are like my father and never have the trans. fluid changed. But then I like a stick over an auto. I went in July to buy a new truck (F-250) and bought a used E-350.

Yes. A E-350 15 person Van with a 5.4 V8 engine & a tow package with 50,000 miles for under 20k. I replaced all but 1 full seat with a bed. I can put the seats back in if needed. This was not what I went in to buy. I had just ordered my new boat a few days before and was going order a new Ford F-25 or 350 truck. Saved 25k.
