    Default Apple Butter

Saturday we cooked 30 gallons of apple butter in a copper kettle over an open fire. Started stirring at 0400, finished & in the jars at 2230. Long day and well worth it.
We made 218 pints of the best apple butter there is. It was killer on hot buttered biscuits Sunday morning.
We do this the first weekend in October every year. I smoked 2 pork butts for pulled pork, family and friends brought sides, we had a great time and ate too much. Doesn't get better. (Well, maybe a limit of 15" crappie might get close)

    Here's some pics -

How it's done. It has to be stirred continuously or it will burn -

30 gallons of boiling apple butter, it's about ready to put in jars -

I smoked two of these for pulled pork -

I'll smoke just about anything (in my smoker)
The fishing is always great. The catching varies.

Apple butter is my favorite biscuit topper! I've only made my own once. It was really good but a lot of work and I didn't make nearly as much as y'all!!

Made some pear butter once. Really nice with a subtle flavor difference from the apple butter.

Yummy. A faster and easier way and tastes pretty good is to start with applesauce and put it in a pan in the oven. Just add the same spices and stir. I use a roasting pan. Better than anything in the store.

I make a killer apple butter pork loin. It's supposed to be done in the oven but I do it in my smoker.
