    Wrap the fillets in thin strip of bacon, season with Cajun seasoning and throw on the grill for 15 min or so until bacon is done - sometimes stuff with a jalapeno and sometimes add bbq sauce after almost cooked to change it up, never had a complaint nor have there ever been any left.

    Blackened over grits with aspargus. Google any shrimp and grit recipe will do.

    If you like New England style clam chowder, I tried a recipe that used crappie fillets. That was pretty good and is a good way to use up all those tiny fillets from Bill's catch.

    I've also melted a small amount of butter in the bottom of a baking dish, covered the bottom with a layer of crappie fillets, season with Lawrey's or your favorite seasoning, sprinkle the top with some kinda seasoned stuffing mix and a couple pats of butter on top of that and bake uncovered at 375° for ~15 minutes or until it's done. The bread crumbs are crispy, the crappie is buttery goodness.

    Melt some real butter, dip fillets in the butter and put them in a pie tin, shake a good bit of Lemon Pepper seasoning over them and cover with foil. Bake at 400° for about 20 minutes then remove foil, drain off the excess butter and juice and put back in the oven (uncovered) for another 5-8 minutes but go ahead and turn the oven off. While you're doing the final cooling down bake whip up a batch of minute rice and add some butter, salt & pepper to it. And what the hell...steam some broccoli and carrots too.
    Serve the fillets on a bed of rice with steamed veggies on the side.

    Grab a beer or a glass of Chardonnay, sit your ass down, light a candle, and ponder the meaning of life.
