Thanks Steve. I don't know if you ever bought jerky from Hannah's in Sunfield but they had, in my opinion, the best jerky I ever ate. I tried to replicate it and that is as close as I could get. How did the boys like the pepper bologna?
By the way, I made it down to Louisiana again, safe and sound. I'm going to fix the bad wire on the trailer and plan on fishing D'arbonne a bunch while I'm down. Stay tuned for reports.

I was going to try out where I bow hunt on state land.
But upon arrival I had an (Old Person Moment) and realized I forgot my climbing stand.
So I drove over to my other place. Helped unload a trailer of wood, and am now ready for a evening hunt/nap.

I never got jerky at Hannah’s, we had a lot of beef and pork processed by them in the 60’s and 70’s when Harold Hannah owned it and Frank Vyverberg was the meatcutter. They always did a good job with that so it doesn’t surprise me that made good jerkey. Pepper Bologna was a hit too, we needed a pre Thanksgiving snack so everyone got to try it.
Jr. Put down one of these corn thieving soybean mooching deer that live off my dime. 210 yards (rangefinder verified) dropped in its tracks. I love it when there is no tracking involved.

I did up some brats last night aling with 10lbs of Salami, 10lbs of jalapeno summer sausage, and some pepperoni. Got them going now.
Now I remember why I only make it every couple of years. I'll get to some jerky (eventually) if I feel like it.
