What you are looking at here is the stepped transom. That "curved area" that looks like it should be sitting down on the bunk in reality is likely no more then 6-12" long
Edit to add- it does look as though the right bunk did move inward, which would make the bunk spacing too narrow, not too wide.
I’ll bet the lag screws are loose and the boards are crooked from being wet.
Next time at the lake with the boat off, take your ratchet set with you. Push the bunk over and tighten the lag screw on each bunk.

Had sort of the same issue. Bolts were loose on one of the bunks. If that is your issue I would check the rest since your under there.
