Literally went from working fine at night to no ignition in the morning. All I did between the 2 was fill up tank with rec 90 fuel, which is my first time using it. Think it's the gas?

Tried jumping. No luck. Engine cranks, slightly catches and then nothing. It's like the spark is there and fuel ignites for a split second but doesn't continue to ignite after the initial catch. Wish I could post video to better explain it.

Oil injection is not electric type pump, only mixes oil in the gas while engine is cranking, now one recommendation , you say you ran motor until it ran out of gas, in doing that the VRO pump is mixing oil all the time and when the gas starts to run out the pump puts in more oil. Its not computerized it doesn't know the difference it just does it, so what most likely happened is your carbs are now full of oil and straight oil won't burn and gas won't go into carbs for the above reason. Try taking off the air box , remove the brass flat blade plugs on the bottom of each carb and see what runs out, probably straight oil, do this to all the cabs if so then with plugs still out pump the primer bulb to flush out excess oil, reinstall plugs then start the motor. Oil injected Johnson/Evinrude motors should never be run out of gas for that reason

With running out of fuel, check prime on the fuel line. I know it sounds simple but sometimes we over-complicate things and gloss over issues we would usually catch.
How do I get the 2 bottom bolts out? They are under the lip of the engine and I can't get a screw driver to them I'm going to assume there is a special tool or something. Also clearing out the other 4 allowed engine to fire up so looks like that was a primary factor. I'd like to drain the bottom too also though since the other 4 were filled with oil.

Split the lower cowling, 3/8 bolts allows you to open up the cowl to access the two lower float bowls, it is fairly easy

I am in agreement with battery issues. Typically if a battery is discharged to below 5 Volts it is toast. I have heard of stator issues causing the same problem.
By the way motor is running now for a good 20 minutes with no stalls
