Why are you trying to run 2 trolling motors at the same time?
Does anybody know or has anybody tried linking two trolling motors to one humminbird to control them both at the same time?
May the Lord bless you and keep you.
May the Lord show you his kindness and have mercy on you.
May the Lord watch over you and give you peace.

I don't know the specs but I'm thinking the Bird wouldn't have enough current to handle 2 at once.

It could be done by slaving one to another via relays and switch. You could have one master and one slave. However, on occasion, you would have to manually sync the positions of the TM (orientation ahead). No such thing as a perfect solution considering the involved equipment. 2 relays and 1 dpdt switch required. You could make it wireless too.
