    Default Yamaha 50 2 stroke carburetor ???????

You can't to my knowledge buddy. That's why I suggested buying some from tohatsu and swapping them out. Yamaha presets there's factory.

Any ideas how to get these caps off without tearing them up would be greatly appreciated. Thanks again.
If they were Merc carbs I could tell you how to remove the plugs. But I've never worked on Yamaha carbs (except motorcycles) and I don't want to mess you up. Bottom line is if you remove them you will have to put new ones in but don't put them in until you are sure the jets are adjusted properly. BTW the motor will run just fine without the plugs. At least Mercs will.
