My grandfather and my father always removed the dorsal fin the same way. Then they would get the skin between their thumb and knife blade(not the sharp side) and simply pull the skin off. They never ate the skin of a fish. I was raised in middle Tn. and I reckon that is their parents taught them. I skin my bream (not crappie) the same way I skin a catfish. Mark the shoulders with knife and grab skin with catfish skinning pliers and pull toward tail. I do this with fish caught and could not release below 8". It is nice not to have all those scales all over the place. Removing the skin by either method makes for a much nicer platter of fish on the table. The breading of your choice sticks to the smooth fish better than it does with the unskinned fish. Note: don't try to skin a crappie, the meat is softer and will come off with the skin.
Maybe a good way to do brim. I have never found an easy way to filet them, just hard to get a handle on them.

This is exactly the way I skin them as well. I have shown this to several folks that scale their fish with spoons. They now skin every bream they catch. I have cleaned smaller bass and smaller crappie the same way, but as you mentioned, be very careful as the meat will come off with the skin on occasion.
