From what i got out of the 2 videos was the perch guys method was a field dress way of doing it and of coarse the other way is what most of use do at home. I always look for other ways to do things and you never know it might come in handy when your out in the middle of no were land

Been cleaning perch like that for 20+ years, first time I've ever seen someone do it on video but it does work. After cooking if you hold on one side you can just peel all the meat off and then the other.
They do clean fast once you've learned it.

An electric knife is the only way to go when filleting fish, but i don't change knives to remove the rib bones, i just continue to use the electric knife it's much faster.

When you do it like that one the ice. Have a bag of bredding and a hot greased pan ready.

What a video, I hate cleaning Perch. I'll try that next time out. Great show.
Even after fileting the same way as the fella w/ electric knife, there is still one row of bones in the center of the filet, running from tail to the head direction. I slit the filet on each side of the dark meat about 1" up, at the tail. Then pull the two pieces away from each other, and the remaining row of bones seperate like a zipper. Repeat for the other half, and NOW it's truley boneless!
