Slab we have cooked it several times. Old timers say hang them up and beat with a ball bat to loosen the shell. Chop off head and tail and split up the belly. Pull out the body and then cut out the backstraps. Eggs are green and said to be poison according to my Grandpa. I fried some once and shared with locals here. One guessed Bluecat and one said Flathead Cat . I told them both wrong , it was Saber Tooth Cat . : It tastes fine but as Slab said more like Pork Chop texture . Deep south folks used to grind the meat and make Gar Balls. One asked me if we ever cook Gar Balls , I said no never saw any on ones I caught.

I've eaten gar balls in a brown gravy. A lot of work involved for something that was okay, but not awesome. I think the guy who cooked it called the garballs, boulettes. Rojo did you mean Ville Platte? Never heard of Palette.
