Prayers sent for you and cajunlady.
Just when things were getting better for Ms Joyce, cajunlady, (my better half). Back a winter or so ago, while out on the road working, she was climbing down out of her truck, she drove over the road trucks 32+ yrs, her foot slipped and went all the way to the ground while her other foot unfortunately stayed on the top step at waist height, maybe a bit higher. It's been bother her ever since. She went to the Dr Tuesday this week and found out she is getting a new knee. A blood test revealed, due to a steroid shot to that knee, she's a diabetic, that here A1C is 8.5. They wont operate till it's well below an 8. I put her on a very strict, Low carb diet, since I do most of the cooking, Yes I imposed it, lol. I need prayers for her, and guidance on what to do to help her.
At the same time I am trying to alleviate the pain in my knee. We are seeing the same Dr. and she don't see anything in an Xray requiring my surgery yet. I had injured mine a few times in the service, so the Dr's P.A. ordered an MRI to see if it didn't heal right, or maybe scar tissue an Xray's not showing. The Dr. got Xray's of my hip thinking it was causing the knee pain, and said I have extreme narrowing of the joint, (My friend Arthor...), but that's not bothering me, however the knee has kept me in bed a bunch of times with pain and swelling. What ever they find on me, If an operation is involved, It will be put off till after Ms Joyce has recovered...Thank you all ahead of time for your prayers.

Prayers sent. There are lots of low carb options out there if y’all can find them palatable. Some stuff by Atkins of course but we found them expensive and went our own route. Cut out breads, sweets and taters or severely limit them. If y’all like ice cream there is low carb ice cream for a treat. Lots of folk go with a KETO plan to cut carbs and eat healthy.

Yes sir, I agree they are expensive. My biggest headache is she's from south Louisiana, and loooves rice. Me, I grew up eating meat and tataers, rice every so ovten. She don't like brown rice, it has to be white rice. So it's limited. Tried the KETO and it didn't last very long. So I'm going with 1/4 plate meat, 1/8 plate rice, the rest is vegies. I seem to spend most of my day looking on line for new things and ways to cook things. To be honest, I don't want her to get burned out eating the same thing all the time. We had ribs and asparagus wrapped in bacon and baked with a tossed salad for dinner yesterday...turned out pretty good, and she really enjoyed that, so that one is going in my cook book for future usage...
