I remember an aunt and uncle that did a lot of fishing, both fresh and salt water. They always froze in water in waxed milk cartons. Dont remember the tops being sealed either. Just the fish flesh covered by the water when frozen.
I freeze in a ziploc bag with water but I roll the bag up forcing all the air out and some of the water. I don't want an excessive amount of water as I feel this crushes the fillets when freezing and makes them soggy. I've been playing around with flash freezing them for several hours on a cookie sheet them vacuum packing. I think they are more firm when cooked like fresh caught are.

The fish in water thing I'm sure works but I don't know 8 days before I want to eat fish so I have time to thaw them out.

we freeze em in water in bags and drop em in the sink in a bowl in the am and they are in ice water when its dinner time ...

Frozen in water . We also used waxed cardboard milk cartons (ones with fugitives on them ) . I do a lot better now retired of predicting usage . Ten bags with 10 fillets for the winter months and eat fresh the rest of the year . Let them spawn instead of staying in the freezer for three seasons .
