To start I would probably get the Garmin on a separate power source, just temporary it with open wiring to see what that does, if it dont help nothing cost except a few minutes temping the garmin
Sideview shows below when I have trolling motor on. the clearview of it is when I turned if off briefly. The only thing now is they are connected to the same battery.
What can I do?

Don't hold me to this but I think the boat has a minimum speed it has to be going in order for sideview to work. I'm sure someone more knowledgeable will chime in.

It is not uncommon for interference to be present if the electronics unit and the trolling motor share the same battery ...
Add a dedicated battery for the electronics ...
