I have a selection of Dexters from 5 1/2" up to 8". I find myself reaching for others before I use the Dexters. I wanted them to be the perfect fillet knife but for some reason, they're just not. It may be the thickness and geometry of the blade itself that just isn't quite right; I just can't quite pin down what makes them not my first choice.

Dexter Russel Sani-safe 7 or 8 inch narrow is what I like. Web Restaurant store usually has good prices
This is gonna be a personal thingie. Size of your hands, the way you move the knife, the setup to clean on,and your technique all affect what is best. Most all of my fillet knives will take a sharp edge and I keep a sharpener close by for use as I go. I actually use three knives. A 5” Rapala blade that I bought for $5 does the initial detail work along the spine. I use a serated bread knife to make the cut behind the gills. Finish is with a 12” thin bladed fillet knife to separate the skin. Nothing wrong with having multiples. I used to take each fish through all the stages, but now take all the fish through each stage. Quicker.
Mr Crappie sells a fine knife. Takes a keen edge if you like really sharp things.

I bought this to bone my deer but find I grab it first to filet all my fish too. I only paid $33 when I got mine so I'd shop around if you are considering it

Dexter is what 90% of your professionals use. MOST other recommendations will be just whatever someone who cleans fish time to time has, and works for them.
I like my cheap mister twister electric. For a regular knife I’d get that victorinox. Or if you have money burning a hole in your pocket get one of those bubba blades
