Small 8 inch works best for me. I have more control and my fillets come out better. Larger was like filleting with Excalibur.

I like a 7'' blade but helps to be real sharp . I use mostly the tip till I remove the skin off the fillet . I clean mostly bigger fish but even then I don't like bigger blades .
