    i will remain old school on my attempts at caveman cooking
    half the fun of burning a chunk of meat is playing with the fire
    fire is its own little life form and i enjoy the manipulation
    me and the flame have become friends over the years
    she gives and takes
    i recently got a new to me longhorn offset smoker
    my old offset went to our place in the country
    sum kawl me tha outlaw ketchn whales

    In an offset smoker slow burning charcoal is mainly for heat, the wood used is for smoke flavor, for ribs, chicken, or turkey I prefer hickory wood chunks not chips.

    Pellet smokers are great as long as you have pellets.
    They do an excellent job. ( we have one at work I use )
    I personally use one of the vertical master built electric units with the timer at home.
