    I find my fillet knives make excellent venison processing knives.The thin flexible blade allows for precise deboning,slicing and trimming.

    I like Victorinox semi-stiff boning knives for butchering. Never tried them for filleting but I'm sure they'd work.

    I use a long extra thin and a short extra thin fillet knife when I get down to the actual meat carving myself .
    works like a charm , my deer bones look like a buzzard party on a road kill when I get done
