    I just saw some Buffalo ribs at the store yesterday --- It reminded me of a time over a half century ago catching them in the River. we took many of them home for supper .. I came home and got a package of Catfish out to thaw....

    Last time I went white bass fishing. My best places had been taken over by carp acres and acres of carp. I couldn't catch enough whites to eat. While I was thinking of giving up, a barge came by and carp were jumping out of the water in the prop wash. I noticed some were acting injured. I thought "if you can't beat them eat them". I scoped a couple of them up and put them in the live well. When I got back to the dock I filet the sides off and put them on ice. when I got home I watched You Tube for help to get the bones out and are those suckers. The meat was not at all fishy tasting, very white, firm meat. The amount of meat is not much after you cut out the bones. My skills were lacking for my first attempt. I thought I would like to try them just to say I did if I had the opportunity. I will eat them again but I won't if I have to put much effort in it. I can't see a carp.com in the future.

    When they brought my carp, I'll have to admit it was probably the prettiest supper dish I've ever had. It tasted as good as it looked. Vicki had an $18 hamburger. They cut their own fries so I guess it wasn't a bad deal.

    The carp was great! The taste is very mild and the meat is snow white and very flaky. I've had it before and liked it then and now. I may try to get some for Crankfest. I may have to eat it all myself. I'm sure the KY guys won't let it go to waste.

    It was a great time with family. I don't see myself being in a financial place where we will make the place a regular supper spot.

    I have been to a couple of Hunting and Fishing Expos where US Fish & Wildlife fixed them leaving the long rib bones in cutting them A half inch wide and thick about 3-4 inch long strips with rib bone totally in and then deep frying after battering. You break the strip and pull the rib bone out of which is size of a tooth pick and eat. Each piece was the size of a large French fry. Hate to say it was very good, but I always go back for seconds as they pass them out to public free to taste and they would give you a cup full. I am totally impressed the way it eats and taste. Will take a couple of pics and post in Sept if I run across USFW passing it out again.
