I see it's been a month since the last post, so you've probably got your setup finished, but just a couple of suggestions...
Instead of replacing the power strip with a GFCI outlet or moving it, etc. just take care of the electrical hazard issue at the source. Trace back the conduit for that 4-gang outlet mounted on the wall above your cleaning station back to the breaker panel. Find that breaker and replace the breaker itself with a GFCI breaker. That way, everything on that circuit will be protected and anything you plug into those existing 4 outlets will automatically be protected. And it's a lot easier swapping out a single breaker, and probably cheaper, than purchasing a couple of GFCI outlets. They even make little "GFCI" stickers that you can put on regular outlets downstream of a GFCI panel breaker.
Also, have you considered cutting a hole about 6"-8" in diameter in the stainless work surface near the left edge? Basically above where your bucket is in the picture. That way, as you clean your fish you can push/drop your unwanted parts right through the hole and down into the bucket. Here's an example...
