I have a 6" manual on my 861. I had it installed for SI clearance at transom so I wouldnt haveta trim my engine up to keep from blocking si signal. Get info at BBC for setting manual engine height. Too low, you loose speed. Tooo high, you loose intake water. boom! Crappiestalker helped me set mine up. Took a while to tune it in. Looks cool.

Hope your dealer has great insurance putting a larger outboard on your boat that it is rated for. War Eagle hasn't had a commercial rated hull for 10 years. Those hulls aren't really performance hulls, although quicker than the other aluminum hulls of it's size a jackplate will do very little for a speed increase.
Only reason I would have a hydralic plate is to help the ride in ruff water, lowering the motor gives you more bite and softens the ride. Manuel plate takes a adjusting but once you are done your done. As far as set back, at least six.
