    I'm another one that has cleaned enough fish that I am pretty quick at it. A guy I fish with uses an electric knife and I use the old manual. He doesn't get through any faster than I do and at the end, I still have the rib meat on my filets. I also notice that my knife tends to stay on the backbone and collects a little more meat near the tail.
    How fast??? I don 't have a clue but I don't mind cleaning a limit of crappie or bream.

    We have a little group that fishes together in our area and eat fish every tuesday crappie,catfish,buffalo, may have eaten a skip jack a time or too.We fillet some and cut some into steaks "Leave the bones" and to me the ones left on the bones taste better than the fillet.Just something about fish or game cooked with the bone. Not a matter of how fast a matter of getting all the meat or most of it!!!!

    not being good with any kind of knife it's not how fast, but how I can get it done and keep all my fingers!!!
