Sorry, I didn't read the thread close enough. Sauger, we don't have them in Texas. I would like to try some them one day.
No problem, Don. Yeah, I didn't think you Texas guys had them. I've eaten them (& Walleye & Muskie) and they're quite tasty. They're just not a fish that I care to chase, but if I happened to catch one of legal size, then I'd certainly not turn it down for tablefare.

We have all 3 species here in Ohio, the sauger, walleye and the hybrid saugeye. They all eat great, nice firm white fillets that the bones unzip on like they were made for eating. My understanding is they decided to mix the 2 for the hybrid because of the larger size of the waleye combined with the aggressivness of the sauger and came up with the saugeye which is mostly what we chase on the inland lakes here in Ohio. They are a lot easier to clean than crappie and 1 eater fish (20 to 24") will feed 3 or 4 people so they are great table fare. But better than crappie? Not!
How about White bass or Sand bass. Do any of you have them in your water? We chase them when they are feeding on the surface of our rivers and lakes. Normally we catch a mix of crappie and sandies, and fry them altogetherfor a great meal. Can't choose witch is best when they are cooked that way. The fisheries have crossbred them with salt water stripers to make a hybred. They are all fun to catch. Thanks for not razzing me too much being a new member here.
the saugers here tend to be fattier than walleyes which when cooked properly taste even better. i fry them at a lower temp than walleye and that allows the fat to render a bit more and they are delicious.
Very good table fare! I usually go after them and Walleye after June 15 after they have spawned and rested up for a few weeks and are loading up on food. Several ways to fish for them but I usually sit on a point or bend in the channel in the lakes in 15 ft of water, with a slip bobber with a nightcrawler on a #2 hook off the bottom about a foot. EB

We chase walleye here in South east missouri and consider the walleye and sauger the best eating that you can get.
Sauger are a close cousin to the walleye. Generally much smaller. Both are toothy critters. In the perch family I believe.
