SteveJ, I have had so many people tell me that they do not like fish and that everyone tells them they can make it where they will like it. Then I ask them, well did you like it and they say NO. So they are skeptical then about trying mine. I have yet to have a person who did not like my bream I cook. I let 5 new people them the other night and they all liked them as well and said I hate fish but I like those. Bream are great tasting and during this time of year I can catch them big enough to fillet if I can find the beds.

Dutch oven and propane gets it done for me. I found a burner at Home Depot a couple of years ago I really like. Low to the ground and wide. Less likely for it to get knocked over. I really don't use the thermometer any more. I started burning the oil trying to maintain 350 degrees. Now, at the start, I watch the oil to see if it is churning. Then I use a couple of "Tasters" to get it right.
When it is just me and the wife, a Fry Daddy is perfect. But, I still cook out on the deck.

For small batches I have a Delonghi deep fryer in the kitchen. It has an aoutomatic temp control that keeps the oil at perfect temp. It has a lid that you close before the fish goes in the grease and there is no splatter. Also has a drain tube to remove the oil for cleaning. If I am cooking for a big crowd I use the propane outside.

I bought this Hamilton Beach 35030 Deep Fryer about a year ago on eBay.. It's a great fryer for 2 people...has a good thermostat
and timer. Easy clean up and takes minimal space on the countertop..
