I would go with a Jon boat
Whats your best one man carry on boat? Or homemade contraption? Not looking to spend a lot of money.
I have a few small pot hole lakes I want to try but need a carry on boat, I would need to carry or drag the boat about 75 yards, some of them may never even get fished in a years time. The problem I am about 250 lbs, and a small canoe is not good for me, I need something fairly stable, with a transom so I can mount a electric trolling motor, put in a battery and a fish locator/ flasher. And not have to worry about tipping over. I know I will be planning on making a few trips back and forth to the truck, I also have a big 4 wheel pull wagon cart.
I would go with a Jon boat
Kayak with paddle power might be a better option if you have to drag it very far. Different designs are very stable and you can probably pick one up on the cheap once you decide on a design, with patience. Lugging a battery and trolling motor and boat and tackle ain't gonna be much fun even with the cart.

I never thought about a kayak, I never really tried one. It would eliminate the need for a trolling motor and battery, and I do have a portable flasher I use for ice fishing. Are they hard to fish out of or store a tackle box?
Had 12ft jon boat.........did not like it..........with two of us the boat seemed
toppys.............for a carry on boat would give some deep though to large inflatable boat

Get a float tube. That's what I use for fishing places like you describe.
This works for me...
Can't see the pic of the float tube, but yeah, that'd be an idea too. Don't know a lot about Kayaks, but some folks are fanatical about fishing from them. There's several designs, some better for fishing than others though. Some have storage on board, some don't and there are sit on top and sit inside models. Sit on top as I understand them are more comfortable, but you're liable to get your bottom a little wet from waves lapping or splashing with the paddle etc. A little googling will go a long way here if you decide to go that route.
