Man that looks good. I need to mix it up sometime. I love them fried and have a hard time doing anything else. I always think, if I mess this up I just wasted some crappie, which I probably place too much value on. LOL
So I have to change it up once in a while and cook my fish in a different way from the norm. I like to substitute fish filets for shrimp or crawfish, or any other seafood item and it always turns out pretty darn good. This time i went with a fettuccine.
I used 1 jar of prego cheddar cheese sauce, 1 can golden mushroom, 1 can cream of shrimp, 1 can mild rotel.
Saute some onion and peppers then stir in the above listed items and add some water or milk (or even some jalapeno juice) to thin a little. Simmer (stirring regularly) for 20 minutes or so and season to taste. Meanwhile boil some fettuccine noodles.
Spread the noodles out in a 9 X 13 casserole dish cut up some filets and place on top of the noodles. Pour sauce over the top of the filets. Bake at 350 for 30 min or until golden brown on top and good and bubbly around the edges.

Man that looks good. I do that same recipe but with shrimp crab and craw fish. I found out it is a lot cheaper to modify those pre-made sauces than to make them from scratch. I also use egg noodles they hold up better than regular pasta in a casserole. I am going to have to try it with fish. Thanks for sharing!!!!
