    Default Speckled Trout recipes


    Hi all. Does anyone have a good and easy speckled trout recipe? My wife doesn't like fish so I was looking for possibly something where I can mix the fillets with Italian bread crumbs, butter, parmesan cheese, etc. I am a terrible cook, so any recipe you have will be appreciated

    Put fish in a baking pan or a pyrex, season it with salt, pepper, garlic and some old bay or tony's. Put slices of butter on top and sprinkle with parmesan cheese and italian seasoning (not bread crumbs). Turn on the oven to broil and throw in there for 5-10 minutes depending on the thickness. I also add a little lime juice but you can add or take away any ingredients youd like for this simple recipe.

    If you follow my directions exactly these will work great with speckled trout, and your wife will be begging you to go fishing more often after!

    Lay out one piece of bacon cover with cream cheese then cut one piece of trout same size as bacon then roll up like pin wheel put one red onion wedge on each side and skewer then repeat till skewer is filled ....cook on BBQ pit or in pan when they are done add one slice of pepper jack cheese on top and enjoy ...pops don't forget to season or marinade before cooking ....I like to use Hawaiian marinade

    Maybe this might work. Blackened specs.

    Season the filets well with salt, pepper and Paul Prudhomme's Blackened redfish seasoning. In a bowl, soak the filets in melted butter with a little lemon. Heat a black iron skillet red hot on the hottest fire you can generate. This should be done outside as it generates lots of smoke. Using tongs, put the filets one at a time in the skillet. For 1/2 inch filets cook for 45 seconds, then flip and cook the other side for 45 seconds. Adjust time for filets of different thickness. Delicious!
