Dr. Gelcoat in Paducah is who I hear a lot of good things about, but I haven't ever had anything worked on there.
I did have C and O Marine in White Bluff, TN do a significant repair on a boat a few years ago, I was totally impressed.

If there's any painting involved, you might even check with Defew's in Draffenville across from the high school. There's been some awesome paint work on fiberglass come out of that place over the years. It's been a while since I've seen Jeff Defew who runs the place, but last time I talked to him he was still fishing bass tournaments, and even had some custom painted baits for sale.
