I use to keep a small tackle bag between my legs when I had the paddle kayak. Also might could store a Plano box on the sides standing up. I have a wilderness systems bag mounted on my track with a Plano box inside.

I use 2 small pocket size plastic tackle boxes, they fit in the pockets of my PFD. 4 to 8 floats fit in a smaller pocket. My rods are set up as I will fish when I leave shore. I'll carry 10 of each 1/32, 1/16 and 1/8 oz jigheads, 10 of each 6 to 8 different colors of grubs. A few sinkers of different weights. All that can be put back in the big tackle box and replaced with crankbaits if needed. No need to carry a ton of stuff, you're not going to be out there long.
I have a few soft sides coolers that have been used for minnow buckets. I need one that is thinner so it fits between my legs. I removed the insert once and got soaked with iced water.
Have the same issue. My back won't let me contort to can reach a crate, so I use a softside tackle bag with plano boxes. I scored a softside tool bag at HomeDepot a couple of years ago that works well also.
I use a NRS floatation and carry small waterproof tackle boxes in the pockets, along with tools, tippet etc.

Now if I can just find a better way to carry my beer??? Canoe often gets the nod account of that and better rod protection.
I have the older style chinook pfd. Does have good pocket space.
May not be the best method but I have a Plano box for my terminal tackle and 2 ziplocs with my go to plastics for quick access in front of my seat in between my legs.
