Yes as far as I know they are all plastic. Think of the Hobie as the Cadillac of kayaks. Personally there are a bunch of good kayaks for less money I would consider.
Are most kayaks today build with plastics instead of fiberglass? Just wondering why the price of Hobie are so much more expensive size then most…

I have not heard or seen them.
Most kayaks are roto molded these days, though there are fiberglass models out there. The fiberglass kayaks tend to be lighter and are often faster on the water. A buddy of mine has a glass kayak that is a bullet compared to mine, though mine had way more storage space and is rigged for fishing, where his is not. The hull design on mine is wider and more stable. It really is an apples/ oranges comparison unless both boats are identical, aside from composition. My boat is quieter if you bump into wood or rock than his fiberglass kayak. If I found a fiberglass kayak I liked the cockpit layout of, I'd consider buying it, but there are many more roto molded options on the market already designed with fishing in mind. I've found that the vast majority of fiberglass kayaks are either recreational or touring models, instead of fishing first.
Hobie kayaks are really nice and comfortable with lots of innovations and design elements built in. You're also paying for a name and reputation. I was looking at buying a used Pro Angler last year, but portability, price, and an already broken part on the drive kept me from pulling the trigger on it. I figured that if I was laying out that kind of cash ($3,500), it wasn't going to have broken parts (one ear where the drive fits into the hull was sheared off), especially when a new drive runs ~$1,000. There are days when I wish I had it. That said, I ran into a guy who's drive broke on the water and I helped get him back towards the dock. He had no backup paddle on board, so I was sea tow until a guy in a bass boat who knew him, dragged him the rest of the way in.

Some boaters will push water at kayakers on purpose just because they think it’s funny. It’s mostly bass fisherman and pleasure boaters. I do believe jet skiers are demon possessed lol
