I ordered an Old Town Discovery 119 Canoe with a web seat back in April. That rascal came in a few days ago, but I haven't been able to get it out on the water yet but I'm pretty anxious. I ordered a new paddle, life jacket, seat and rod holders but they have not come in yet. A few of the ordered items are expected in a week or so while some of the others are looking more towards the middle of July and all of these were items in stock!
I sold my Ocean Kayak Big Game II Kayak recently and included the paddle, rod holders and fish finder. It was a wonderful rig with some wonderful advantages but I was anxious to sit a wee bit higher. As I get older, comfort seems to win out over... well everything! :-)
First thing I did to the canoe was raise the seat 5.25 inches. I know that raising the center of gravity may adversely affect the "fun factor" and become a "fear factor"! It isn't permanent, no additional holes were drilled nor were any penguins removed from their natural habitat. I think I will be able to sleep at night. My goal is to arrange my rod holders similar to how they were positioned on my kayak but without drilling holes. Two Scotty holders up front angled rearward for pulling crank baits. Two Hi-Tec rod holders that will "push da jigs through da twigs while I'll eat sum figs in my rig!" U-dig? I'm so, so very sorry, did I mention that I'm excited to get this puppy on the water? Anyway, that's the plan. When the rest of the gear comes in I'll post some picks.

I have that same ride. I can’t imagine sitting in it with the seat 5” higher. I do wish the seat was higher in mine but unsure of the stability. Post some pics and give us a report on the stability once you test it out.

I finally got the canoe rack for the truck (not fully installed yet) and my life jacket. My paddle that I ordered probably won't come in until around mid June. I should have an old emergency paddle that I used to use stow on my aluminum boat somewhere. If I can use it, I'll try to get the boat on the water and at least see if it floats. Assuming I get her out tomorrow, I'll take some photos of the seat raise and update on the stability issues. I'm anxious to put it to use.

D10, You were correct! Raising the seat on that canoe, that height is a recipe for disaster. You can't fight physics! I guess I have been listening to the wrong fellas that have said that they have done the same without any problems. I will spare you the details my disaster(s) but let me just say, that for me, it didn't work out, nor even come close. So unless you are an aspiring tight-rope balancing phenom.
What now you ask? I'm asking myself the same question! I plan on lowering the seat to it's factory default, but I don't think I can stomach the low rider technique. That's one of the reasons I got rid of my kayak. If I can't live with it, I guess I'll have to sell it and look for something like a 14 foot canoe with standard seat height.

This is a GCI canoe seat that many have raved over. I'm not a fan of 'em, but I guess it's better than nothing.

There lots of kayaks with higher seat positions that are pretty stable. I would check with local kayak stores about next demo day and go try some options. Surely you can find a kayak or canoe that will fit your needs.
What about adding outriggers?
I'm not aware of any Demo-Days locally unfortunately. That would have been a blessing. I really would like to stay under 50 lbs since I will be throwing it up on a truck rack but I'm afraid I'm either gonna have dole out the $$$ or expect a weight around 80-90 lbs.
