I don't have that particular kayak, however I have seen 'em up close and online. You do have several good options that have already been provided. The gear tracks obviously will provide the best placement for trolling rods. Many guys have their rods directly perpendicular from their kayak. Two difficulties with that method: Rod butt getting in the way of either pedaling or leg comfort. Secondarily, the rods are in my way while paddling (I know that won't be a concern for you) or trying to fit through a narrower area.
I found a solution that has worked for me and I love it. I have the trolling rods facing behind me. I have no problems paddling nor do I have rod butts getting in the way of comfort or safety (easy to exit the yak if need be). It is easy for me to notice if I have a fish on because the rod tips will dance to their own little tune depending upon the species/size of my catch. It is much easier to reach up instead or having to reach uncomfortable in front of me. Another plus for me is when I either land the fish or want to tie on another lure, I just seat the rod into the rod holder and the fishing line drops into my lap for me to work on with without having to juggle a loose rod. After landing a fish, the rod is safely out of the way and I have two hands free to deal with the catch of the day!
As far as the fish finder, I would consider mounting on one of those black box covers. Inside of one is where your transducer scupper hole resides and the battery itself should fit nicely in there. One other option is just mount it closer to you on your gear track if that is your preference.
Take all of this with a "grain of salt"! Take your rig out a few times and give it some thought and time and before no time you will have the confidence of knowing where you want your stuff. Oh yea, I liked looking at a gazillion of photos of how others have rigged their rigs before drilling into mine. Good luck and let everyone see what you decide when you do!
