Take a look at The KC Kayaks. They are not the quickest on the water but I don't believe there is a more stable kayak out there. I own two wilderness kayaks, the Commander 120 which is more like a one person canoe and the Ride 135. Like them both but if I were to get a third it would be the KC. I have three buddies with one and they all put a trolling motor on the back and cover miles of shoreline a day. Corey the owner is a great guy and generally finds a way to put people in his kayak.

i bought the kc kayak on a whim, once i got it home after looking it over i was worried about repairing it. im extremely rough on stuff. it did seem like a well made kayak, i was lucky the dealer i had let my swap it for a nucanoe the next day. this was 2 years ago not sure if they still look like bathtubs or not, but it was fairly light for its size. never put it in the water so i have no idea how they perform.
I bought the Feelfree Lure 11.5 last summer and have been very happy with it. The stability is amazing and the seat is one of the most comfortable I've fished out of; in any boat. Here's a video review I did on it last summer...

Have you looked at Jackson kayaks? They have several top of the line fishing kayaks, but one line especially good for beginning kayak anglers, their Cruise kayaks. They are affordable, stable enough to stand in, the deck is clear enough to fly fish on and their lawn chair style seating is comfortable all day long on the water. The Cruise Angler series comes with inserts to attach several types of accessories but is not cluttered so you can set the yak up your own way once you get used to it. I highly recommend the Jackson Cruise Angler 12 as not only a good beginning boat, but one that you could easily be happy with over a lifetime. My wife and I are proud owners of a Jackson Cruise 10 for her and I own the Jackson Big Rig.

+1 on the Old Town Predator. I am a bit biased toward them...I'm a manufacturer's rep for them. I've paddled all three versions- the MX, 13, and XL/MK, which are the 12', 13', and oversized 13', respectively. The MX and 13 are very stable and cut the water very well; the 13 is a bit faster, but the MX is more manuverable. The XL/MK is HUGE! It is EXTREMELY stable, plus as previously mentioned you can get a 45lb thrust motor console for it. These boats sell themselves if you try them. I've worked several demos where guys came out to try another brand's kayak because they heard it was more comfortable, more stable, or paddle well, then they tried the Predators and they ended up buying one. Not a knock against anyone else's yak (they're all good or they'd be out of business!), I just think you'd be missing out if you didn't consider the Predators! Ocean Kayak (also part of Johnson Outdoors) has some great boats too.
Just remember this when looking at kayaks- everything is a sacrifice. A longer boat is usually faster, but also harder to turn. Wider boats are much more stable, but you'll lose speed making a wider kayak. Consider the weight- if you're going to be loading/unloading by yourself, make sure it's not too heavy for you.

I purchased a nucanoe two years ago,while I cannot compare it to many other kayaks,I will say it is absolutly very stable.I have the 12' frontier,it is aprox 45" wide,carrys an impressive payload,has a stern that is set up for a gas or trolling motor.It weighs 75lb,fairly heavy,but I didn't want a thin tippy yak,I wanted something I could take a passenger in if I wanted.Check them out,I believe they now have a slimmer version caled the pursuit,for those wanting less.
