Like stated those hogs clearly have some pot belly pig in them. The short snots are a dead give away.
The two from February were lean but very clean tasting meat. I just pan fried some back strap medallions from the old ugly one from Wednesday afternoon.. good clean taste but not as tender as the two smaller ones. I tenderized the BS medallions with a meat hammer, used Koniko Greek seasoning, a little Avocado oil in my cast iron frying pan. Side dishes were canned yams and collard greens.. Wife was very happy and did not use any sauce on the meat..I used a little Mae Ploy Sweet Chili Sauce.
