Caught a 2 pound channel and a 1.5 pound carp on my 5 wt yesterday. Both good fights but I certainly felt like I could get more out of the rod.

I like you had a rod stolen 3 wt and bought the 8 1/2" Dogwood Canyon Combo 5 wt last week. They only had them in 5 wt in the store in my area.
I like it a lot!! And think it is a good Value for the price.
It is a moderate action rod and suits my laid back casting style well.
Five Wt for Sure
I cannot add much to what has been said above. The #5 with a moderate action will be plenty fun with bream. I fish with a 5# most of the time. I also have a #4 which I like but I feel it is not fish nor fowl. I have a #3 ordered for the days when there is not much wind and long distance is not important.
My preference is a 9' rod. I always fish from a boat and I like the way it cast. That is just my preference. I would not go any longer than 9' or any shorter than 8'.
I think the rod you are looking will be very enjoyable.
This is must my opinion.
