I did that on my 1720 Key West also.
I moved the console from it’s location as far as possible, then cut in a larger opening so i could get my arms in there.
Then put the console back where it was.
Did the same thing back where the pumps are located.
Also removed the backrest cushion on front of the console and cut a large hinged hatch into that.
Now i have easy access to the fuses plus more storage on the shelf i put in there.
Many boat builders dont put enough thought into things like that.
