So I am struggling with the side image part of the unit. I just can't get it to show me pics like the ones on here or where I see else where. Are you suppose to set the feet out to the sides according to the depth of water you are in? Any help is appreciated.

Running straight lines at correct speed are key.

What transducer do have? And is it on your trolling motor or stern mounted?
With Lowrance 455 kHz works best with the lss2, 800KHz doesn't have much range I don't use it much.
If I'm running my SI manually I usually leave it at 40-60 foot range in 10-20 feet of water, auto range works well if your in a some what constant water depth. Make sure transducer is running as level as possible to the lake bottom set it up like this video YouTube
And remember clear water with hard bottoms and objects will return a nicer picture then muddy water and soft mucky weedy bottoms.
In settings the boat speed should be set to match your boat speed and the Boat should not be running faster than the setting, Or you get what you Described
