These aren’t mine but thinking of making some but Wondering if these would produce any better than just using regular 1x2 strips or the 1/2” x 4” pallet slats, what do you think?

Looks good but I don't think they'll last very long. Those limbs can't be attached to the pallet very well.
I prefer to just use 5 gallon buckets and plastic trays, and pack limbs in them.
The buckets are free from local bakers and you can get broken bags at Lowe's, Home depot, etc for a huge discount. The buckets are also easy to move and drop.
I use 3-4 pallets stacked together as cover for minnows and small baitfish and place it in the shallows, close to the main cover.

Stakes easier to attach than limbs . Driven in or set in concrete stake beds made of Cedar or Hardwood last better. On muddy bottomed lakes the pallets give fish something get on above the muck and do well .

Stakes are much easier to build, and fish.
your limb version will attract fish as well, maybe quicker, but you will hang up a lot more, and if placed shallow, wave action will cause attachment points to weaken.
