    Default If You Like Salmon Patties You Will Love Crappie Patties


    CRAPPIE PATTIES

    8 ea crappie fillets

    1/2 small onion diced

    1ea large baking potato (boiled)

    2ea eggs

    salt and pepper to taste

    enough oil to cover bottom pan.

    makes 10 to 12 3 inch round patties


    in a sauce pan add enough water to cover crappie fillets add one
    table spoon salt and 1/2 teaspoon vinegar to water. Bring water to
    a simmer. Add crappie fillets simmer 2 minutes or till a skewer goes
    through easy, remove from heat drain and set aside.

    peel cut up and boil potato 15 minutes or till soft to the fork drain.
    in a large bowl put in boiled potato mash with a fork till crumbly. Add
    crappie fillets mash with fork till crumbly. Add 2 eggs salt, pepper, to
    taste. Add onion and ( optional bell pepper chopped ) Stir till mixed
    good. Form patties in the palm of your hands 3 inches round and about
    1/2 inch thick or so.
    Add about a 1/2 inch of veg oil to pan and heat to 350 degrees fry
    patties till golden brown on both sides.

    My mom used to make potato cakes similar to this with leftover mashed potatos. I'm going to try it with some crappie added. Sounds good.
