    Haven't tried this with crappie (can't figure why it wouldn't be great) but it is the bomb with walleye!!!

    Walleye Crab Cakes-

    1# chopped walleye
    1 small can crab with liquid
    1 stick of butter melted
    2-3 green onions or 1/4 large sweet onion chopped
    1/4 skinned red pepper chopped
    1/4 - 1/2 C parsley chopped
    1/4 C Miracle Whip (optional) I used it after a comparable test run
    1 egg beaten
    1/2 c seasoned bread crumbs
    Bread crumbs for rolling
    pinch old bay

    Mix all, roll in crumbs, put on a greased cookie sheet, bake on top rack 375deg for about 15 min, flipping once, until golden on both sides.

    tried it tonight had a little trouble with them fallling apart but they were worth it

    We make a fish cake kinda like these. We bake off 6-10 fillets in a glass baking dish with some cajun seasoning, 350 for 20-30mins. Then after cooling put dish with fish AND liquid in the refrigerator to chill, usually overnight, must be cold and firm or the cakes will fall apart. Next night mix the ingredients listed above EXCEPT we don't add crab meat. Corsely chop/break the fillets up and mix in last. Add the bread crumbs at the end, just enough to bind then pan fry in 1/4" oil to brown and set the egg. We make a mayonase/ketchup/horseradish sauce much like a blooming onion sauce. My wife likes her's like cakes on a dish, while I enjoy mine on a bun with lettuce and above sauce.
