I Use Only Sweet Onions( Texas , Vidalia, Etc). They Seem To Have A Better Taste Over White Or Yellow Onions. I Bread In Two Ways 1- Cut Onions In Rings And Soak In Buttermilk For A Bout 10 Min.,remove And Drop Immediately Into Seasoned Flour And Let Them Sit For A Minute . Remove From Flour And Cook In 350 Oil Till Brown Or To You Liking. 2- Make Up A Batter With Flour, Seasonings,a Teaspoon Of Baking Powder And Buttermilk. Dont Make It To Thick Because You Will Want To Be Able To Taste The Onion And Not Just A Crunchy Batter. Put Onion In Batter And Remove Shaking Off Or Letting Excess Drip Off. Drop Into Oil And Fry Like A Fritterr. Etther Way (stll Good Eats)

Basicly I do like satdoc. Sometimes I make a thin batter with House Autry hushpuppy mix, you can use beer if you want to in place of the water. They might make an onion ring mix but I just use what I already have.

satdoc, no offense but I had to look up Hushpuckena, Ms on mapquest. It's between Bobo, Alligator, & Mound Bayou. :D Nice crappie on your avatar.
