Interesting,never thought of useing cabbage instead of lettuce
Fish Tacos (works great with crappie)
2 Catfish fillets ( 6 to 8 oz)
1/2 tsp chili powder, or to taste
Sea Salt
1 tbsp honey
juice of 1 lime
1 tbsp oil for frying
soft taco shells
How to make it
Dust the fillets with chili powder, sprinkle with sea salt, and drizzle on
the honey and lime juice. Add the oil on the griddle or frying pan over
medium-high heat. Fry the fillets for 4 to 5 minutes or until the fish is
opaque and flakes easily. When their done, flake the fillets into a bowl
with a fork. Load it into a taco shell and add slivered almonds, chopped
cilantro, shredded cabbage and sliced bell peppers. Top with salsa and
shredded Monterrey jack cheese.
Makes 2 servings.
Smart move
A flat cooking surface results in nice, even browning over the entire fish.

Been using cabbage instead of lettuce for a while... however, we use crappie instead of catfish. My ten year old daughter's favorite meal. We also throw in a little chunky Guacamole of Avacado, tomato, a bit of onion, mayo, salsa, salt, and pepper to taste as a dressing for the taco!
