)Grab the head between your left thumb and pointer finger.
)Grab the upper most part of the tail (just behind the thorax) between your right thumb and pointer finger.
)Twist and pull a little at the same time and seperate the tail from the body. If part of the crawfish comes out attached to the tail,, NO PROBLEM,, it's good too.
)Move your right thumb and forefinger down the tail to the point just above the "fan" of the tail and pinch it as you are pushing the tail between your upper and lower teeth.
)If they are cooked properly the tail will pop out of the shell into your mouth as the tail shell collapses against your teeth..
)You eat the tail.
)Now turn the head so that the eyes are facing away from you and suck the juices out of the head..
)Grab another crawfish and repeat the process

However, some pansies like myself...just eat the tail and never suck the head (tried it before and it tasted like nasty creek water to me).

Man, I love crawfish. We have to travel a bit to get them, about an hour and a half. These guys purge theirs, very few of them are muddy. Suck the heads, that's good stuff. Makes a cold drink better, LOL. I think the corn and taters are almost as good as the crawfish. Good stuff all around.
