don't eat crawfish a chinese buffet...they are crawfish that have been frozen and imported from china...god knows how long they been frozen...and always taste like crap and usually the tail meat is almost a black color...the taste is not even in the same ballpark as a fresh La. boiled and seasoned crawfish..

great fisherman..you from grand coteau and steam crawfish? are you a east coast or maryland transplant? lol

born and raised in south louisiana my friend.you can not over boil them like that and are much easier to peel.adding the seasoning on them after they are in the ice chest is the key to great crawfish plus a beer to wash them down.having crawfish this weekend the wife's birthday is next week(april fools) but we are celebrating early.

I could not agree more. I purge them in Icy salt water with Lemon juice and vinegar for 30 minutes. (makes them sick at both ends).. Then rinse them in clear water for another 30 minutes, then back in another round of purge, then final rinse in clear water,, Then to the pot!

    Default sucking the heads

I wish I could get them here. I was stationed in Gulfport years ago and could get great crawfish about everywhere(at least the bars I went to..lol) the only way I've found them in the upstate of SC is already cooked at Ingles and not that good. And when I sucked the heads it was good I guess they knew how to prepare them.
