    Default Chayote con Crappie


    What is Chayote you might ask yourself .....
    not easy to explain , kind of like a squash , sort of ....I guess ....
    white folks refer to it as a vegetable pear sometimes
    reminds me of a Mexican squash pretty much flavor wise , I guess
    been told they are sweet , did not notice it to be very sweet though ,,,
    looks a bit odd sometimes , some have little spikes on them and some are smooth ....we went with the smooth version on this dish ....
    we gave the Crappie and the Chayote a mustard/egg bath and breaded them with our typical mix of panko , cornmeal , breadcrumbs and spices ....
    dropped them on a lightly oiled cooking sheet and gave them about 20 or so at 375 until golden and crispy ....
    some mashed potatoes accompanied the mains and a pink lemonade with a touch of fresh veggies on the side and such to top it all off .....
    would go on to tell you how delightful it all was ,,,,,
    but words don't do it real justice ....just saying
    p.s. the Chayote was boiled and soft before we sliced it and breaded it for the oven , just fyi
